Japanese Cooking - Potato Salad

​In this post, I'd like to share a recipe on one Japanese favourite - Potato Salad.

It is also very much a favourite dish among children and favoured by mums all over as a side dish or Bento (lunch box) filler.

You can make and keep this up to 3 days in the refrigerator.

You'll need:

2-3 potatoes

Onion (optional)

Ham (sliced thinly)

Green peas or Corn kernels

Cucumber (sliced thinly)

Vinegar (a dash)

Japanese Mayonnaise

Pepper and Salt to taste

After you've boiled and skinned the potatoes, cut into thick cubes. If you like your potatoes softer and more of a mash consistency, cook for longer than required.

Add a dash of vinegar, salt and pepper to the potato mixture.

Add bits of sliced onion, ham, peas or corn as you wish to the potatoes. Stir in about 2 tablespoons of Mayonnaise.

Mash them all up! And Serve!
